On-the-Fly Chord Changes

Your "Danny Boy" chord study is excellent - working from just the Melody and then I-IV-V to a number of substitutions and how the theory applies.

I am curious - in a professional solo piano setting, do you and others who work from a basic leadsheet somehow "quickly" and "on-the-fly" put in these many chord substitutions based on experience?

Yeah, when I see a lead sheet I start seeing and hearing the possibilities as I am playing it in real time. You get to see the dominant resolution and related ii's after a while.
