I've been giving it some thought recently, and one musician I thought of was Michael McDonald; specifically his work with the Doobie Brothers.
Take "Minute by Minute" - here we have Gospel/Rock fusion, especially in the intro riff that comprises of a sweet walkup riff. Now he's done a lot more in his career before and since, but this song seemed an ideal example of techniques that have been taught recently on this site

I was listening to the radio the other day and was mesmerised by the main groove/riff of this excellent song

Bruce Springsteen and the E-Street Band's - Thunder Road. The song's built around a piano and it's a great song as well

Feelin' Alright - Joe Cocker
Sounds like the pianist (Chris Stanton?) uses some 16th note funk rhythms during the solos, but mostly a rock song.

I just went to Utube and watched a bunch of Doobie Brothers videos...I had forgotten what a great band they were, and BEFORE Michael McDonald...he is really a good pianist and great singer, but the band was awesome before him also!

Have you made a request on the request link? Thunder Road is a great piano tune. I remember first hearing the album it's on, before Springsteen hit the big time and loving the whole album. I recommended it to my sister and her husband and they laughed! Said he was horrible. Listening now to the videos, his voice was pretty bad on some of the numbers, but what great songs.
