Does one play a keyboard differently from a piano? Our church has added a keyboard to the customary piano, but it’s generally played with the piano voice so is indistinguishable from the acoustic piano. Since I’ll be rotating on the keyboard, I’d like to improve that scenario. Thanks.

What kind of keyboard is it? Why don't you ask to read the manual that came with the keyboard, and also get the name and model number and go on the manufacturer's website for some demos, or check for demos on U-tube.

Also you could try pianoworld.com forums. There is a forum on digital keyboards, and you could get some pointers there.

Seems it would be fun to use some of the organ voices, or harpsichord, or others.

Most keyboards have the option of split voices, so you can switch the upper portion to something like a flute or violin, while keeping the left hand as a piano, organ, or other instrument. Most keyboards have harmonizing functions.

Thanks for the resources. Perhaps I'm overthinking the issue and should concentrate less on technique and more on the capabilities of the instrument.

Yes, I think you should focus on the capabilities of the instrument.
